Hands down, Hogfish are considered one of the best-eating fish in all the Florida Keys. Their meat is white, flaky, and so tender it requires very little preparation.
These are unusual fish because they’re not easily caught on hook and line. In fact, most hogfish sold at the market will have been speared by local divers. It’s a beloved tradition here in Key West to go out and “shoot hogs”. They live on shellfish and are common all around Key West.
To cook hogfish could not be more simple. They have one of the whitest meats of all the fish and can be cooked pretty much every way possible and come out delicious no matter how you decide to prepare them.
