As part of our celebration, we’re presenting yet another fabulous Key West seafood recipe to our readers — this time out it’s our Pink Shrimp and Key West Spiny Lobster Tails and you’ve never tasted anything so delicious and fresh. Here’s how to make it happen right in your kitchen.

Pink Shrimp and Key West Spiny Lobster Tails

As you can tell by the name, this week’s recipe combines two incredible Key West seafood delicacies. It’s the magnificent abundance of things like pink shrimp and spiny lobster that help make Key West the unique place that it is, so why wouldn’t we include as many of them as we can to show off who we are and what we can do down here?

In any case, let’s dig into the recipe. As far as side options go, with the competing flavors of lobster and shrimp already present, we suggest you just serve this dish with a simple wild rice or a lightly seasoned pasta.

Here are the ingredients you’ll need to serve four people a delicious seafood meal:

½ cup softened butter
1 tablespoon pepper sauce
1 ½ cups lime juice
2 tablespoons butter
2 pounds of Key West Pink Shrimp, deveined and peeled
4 Key West Spiny Lobster Tails with the meat taken out of the shell and chopped coarsely
1 lb of sliced fresh mushrooms
1 teaspoon minced garlic
¼ Chardonnay white wine
2 12 oz bags of cherry tomatoes, stemmed

Now here are the directions for preparation:

  1. In a medium -sized bowl, mix 1/2 cup butter with the pepper sauce and the lime juice. Cover and refrigerate for no less than 3-4 hours.
  2. In a non-stick skillet, melt 2 tablespoons of butter over medium heat.
  3. Stir in the shrimp and the lobster meat for about 3 minutes, or until the shrimp start to turn pink.
  4. Still over medium heat, stir in the tomatoes, garlic, and the wine and continue to cook for about 5 minutes.
  5. Take the skillet off the heat and stir in the lime juice blend until it’s thoroughly melted.

Served over rice or pasta, this is a delectable meal that will fill everyone up without weighing them down. And if you’d like a wine pairing to go with this fantastic meal, we’ve found that white wines with vegetable or mineral notes go much better with lobster than fruitier varieties. We’re using a Chardonnay to accent the dish itself, so we suggest a decent Sauvignon Blanc for a more dynamic blend of flavors.
